Ginger Chicken

Preparation 45 mins plus at least 1 hour marinating time for Chicken and Pineapple

Serves: 6


  • 2lbs boneless skinless chicken (cut in large cubes)
  • 1 medium onion (chopped)
  • 1 Red Pepper (chopped)
  • Salt and freshly ground ground black pepper
  • Thinly sliced red pepper
  • Mangetout
  • Broccli
  • Carrots
  • Cubed Pineapple (drained if canned)


For the marinade:

  • 4 oz fresh root ginger, peeled, grated and squeezed for the juice
  • 2 tbsp finely chopped garlic
  • 1 cup Orange Juice
  • 1 cup soy sauce
  • 1 cup dry white wine



Prepare the marinade by mixing all ingredients in a container big enough to the chicken,pineapple and marinade. Marinate the pineapple and chicken for 1-4 hours.
