Ginger Chicken
Preparation 45 mins plus at least 1 hour marinating time for Chicken and Pineapple
Serves: 6
Ingredients
- 2lbs boneless skinless chicken (cut in large cubes)
- 1 medium onion (chopped)
- 1 Red Pepper (chopped)
- Salt and freshly ground ground black pepper
- Thinly sliced red pepper
- Mangetout
- Broccli
- Carrots
- Cubed Pineapple (drained if canned)

For the marinade:
- 4 oz fresh root ginger, peeled, grated and squeezed for the juice
- 2 tbsp finely chopped garlic
- 1 cup Orange Juice
- 1 cup soy sauce
- 1 cup dry white wine

Directions
Prepare the marinade by mixing all ingredients in a container big enough to the chicken,pineapple and marinade. Marinate the pineapple and chicken for 1-4 hours.
